Ingredients

  • 5 tbsp honey
  • 200g caster sugar
  • 2 tsp bicarb of soda

Method

  1. Prep a baking tin by lining it with some baking paper. To do this quickly, scrunch up the baking paper several times and just slot it into the baking tray.
  2. Grab a saucepan and pour in 200g sugar
  3. Lightly grease a tablespoon with some vegetable oil to stop the honey from sticking, and use the spoon to add 5 tbsp of honey into the saucepan. Give it a good mix until the sugar and honey are incorporated together
  4. Melt down the sugar and honey on low heat until it starts clumping together.
  5. Gradually increase the heat on the stove until the clumps dissolve into a liquid and start bubbling.
  6. Add in your bicarb of soda, once the liquid turns brown and is bubbling continuously. Stir in the bicarb of soda and the liquid will start to expand in the pan, this will be your cue to transfer it quickly into your lined baking tray
  7. Leave the honeycomb to harden in the baking tray for 30 mins – 1 hour.
