Ingredients

  • 3 eggs
  • 100g dark chocolate

Method

  1. Get a large bowl and make sure it’s clean and grease-free. As a precaution, wash the bowl with some washing-up liquid to ensure it’s clean.
  2. Separate your eggs and ensure the egg whites go into the clean bowl. Watch my YouTube video below, which shows you how to easily separate eggs
  3. in a microwave, melt the chocolate on low for 30-second intervals until it’s fully melted and runny.
  4. Add the egg yolks to the chocolate and mix until it turns thick and glossy.
  5. Use an electric beater to whip up your egg whites to soft peaks.
  6. Pour your chocolate into bowl and use the electric beater to incorporate everything together.
  7. Pour mousse into ramekins and set in the fridge for 4 hours or overnight.
