Homemade Jam

Ingredients

  • 600g frozen strawberries
  • 150g sugar

Method

  1. Put a plate in the fridge so it can chill and become cold.
  2. In a medium saucepan, add the frozen fruit and sugar
  3. Heat over medium heat, stirring occasionally, until the fruit releases its juices and the sugar dissolves.
  4. Use a fork or potato masher to crush the fruit to your desired consistency (chunky or smooth).
  5. Reduce heat to low and simmer for 20-30 minutes, stirring occasionally, until the mixture thickens.
  6. To check if the jam is ready, place a small dollop on the cold plate you placed in the fridge. If it wrinkles when you push it with your finger, it’s set.
  7. Remove from heat, let cool slightly, then pour into a sterilised jar. Seal and refrigerate. Use within 2 weeks or freeze for longer storage.

Homemade Fudge

Ingredients

  • 397g condensed milk
  • 500g milk chocolate
  • salt – optional

Method

  1. Line an 8×8-inch baking tray with parchment paper, leaving some overhang to lift the fudge out later.
  2. Place the sweetened condensed milk in a medium-sized saucepan over low heat.
  3. Break in your milk chocolate into the saucepan.
  4. Stir continuously with a wooden spoon or spatula to prevent the chocolate from burning. Cook over low heat until the chocolate is completely melted and the mixture is smooth and shiny.
  5. Immediately pour the melted mixture into the prepared baking tray. Use a spatula to spread it evenly.
  6. Let the fudge cool to room temperature, then refrigerate for at least 2 hours (or until firm).

Homemade Hot Chocolate

Ingredients

  • Cocoa powder
  • Chocolate chips

Method

  1. To a jar, spoon in cocoa powder until 3/4 of your jar is filled.
  2. Make a well in the middle of your cocoa powder and add in your chocolate chips. Mix all together until evenly distributed.
  3. As optional add-ins, you can layer on top more chocolate, mini marshmallows, or crushed peppermint
  4. Shake the jar before use. To make hot chocolate, mix 2-3 tablespoons of the mixture with 1 cup of hot milk.
