Homemade Jam
Ingredients
- 600g frozen strawberries
- 150g sugar
Method
- Put a plate in the fridge so it can chill and become cold.
- In a medium saucepan, add the frozen fruit and sugar
- Heat over medium heat, stirring occasionally, until the fruit releases its juices and the sugar dissolves.
- Use a fork or potato masher to crush the fruit to your desired consistency (chunky or smooth).
- Reduce heat to low and simmer for 20-30 minutes, stirring occasionally, until the mixture thickens.
- To check if the jam is ready, place a small dollop on the cold plate you placed in the fridge. If it wrinkles when you push it with your finger, it’s set.
- Remove from heat, let cool slightly, then pour into a sterilised jar. Seal and refrigerate. Use within 2 weeks or freeze for longer storage.
Homemade Fudge
Ingredients
- 397g condensed milk
- 500g milk chocolate

- Place the sweetened condensed milk in a medium-sized saucepan over low heat.
- Break in your milk chocolate into the saucepan.
- Stir continuously with a wooden spoon or spatula to prevent the chocolate from burning. Cook over low heat until the chocolate is completely melted and the mixture is smooth and shiny.
- Immediately pour the melted mixture into the prepared baking tray. Use a spatula to spread it evenly.
- Let the fudge cool to room temperature, then refrigerate for at least 2 hours (or until firm).
- Cut the fudge into square pieces. Watch the video below for a guide on how to do this neatly
