Fluffy Cinnamon Roll Pancakes

Pancake Ingredients

  • 1 cup of self-raising flour
  • 1 cup of milk
  • 1 egg
  • butter – to fry the pancakes

Cinnamon Filling

  • 1 tsp cinnamon
  • 3 tbsp pancake batter
  • 2 tbsp brown sugar

Cream Cheese Frosting

  • 2 tsp icing sugar
  • 4 tsp cream cheese
  • 50ml milk

Method

  1. Put the flour, milk and egg into a bowl or large jug, combine the ingredients together using a whisk or a fork. Mix the mixture until smooth and it should be nice and thick. If not add a tiny bit more flour until you get a thick consistency.
  2. In a small bowl, combine your brown sugar, cinnamon and 3 tbsp of the pancake batter until you get a thick cinnamon filling which is drizzling consistency. Set aside.
  3. Get a frying pan on the stove and add in a knob of butter. Heat it up until the butter has melted.
  4. Use a spoon to ladle in your pancake batter and immediately drizzle the cinnamon filling in a circle over your pancake.
  5. Fry your pancake for 2 minutes or until the top becomes dull and flip your pancake to cook the other side.
  6. Cook your pancake for 1 minute and use tongs to remove your pancake from the pan. Continue to cook the rest of your pancake batter and stack your pancakes on a plate.
  7. In a small bowl, combine your cream cheese, icing sugar and milk. Add in as much or little milk to get the desired consistency you want.
  8. Drizzle your cream cheese frosting over your pancakes and serve warm.
