Pancake Ingredients
- 1 cup of self-raising flour
- 1 cup of milk
- 1 egg
- butter – to fry the pancakes
Cinnamon Filling
- 1 tsp cinnamon
- 3 tbsp pancake batter
- 2 tbsp brown sugar
Cream Cheese Frosting
- 2 tsp icing sugar
- 4 tsp cream cheese
- 50ml milk
Method
- Put the flour, milk and egg into a bowl or large jug, combine the ingredients together using a whisk or a fork. Mix the mixture until smooth and it should be nice and thick. If not add a tiny bit more flour until you get a thick consistency.
- In a small bowl, combine your brown sugar, cinnamon and 3 tbsp of the pancake batter until you get a thick cinnamon filling which is drizzling consistency. Set aside.
- Get a frying pan on the stove and add in a knob of butter. Heat it up until the butter has melted.
- Use a spoon to ladle in your pancake batter and immediately drizzle the cinnamon filling in a circle over your pancake.
- Fry your pancake for 2 minutes or until the top becomes dull and flip your pancake to cook the other side.
- Cook your pancake for 1 minute and use tongs to remove your pancake from the pan. Continue to cook the rest of your pancake batter and stack your pancakes on a plate.
- In a small bowl, combine your cream cheese, icing sugar and milk. Add in as much or little milk to get the desired consistency you want.
- Drizzle your cream cheese frosting over your pancakes and serve warm.
