No-Bake Carrot Cake Energy Balls

Ingredients (makes 9-10 balls)

  • 1 carrot, grated
  • 80g rolled oats
  • 1 tbsp peanut butter or almond butter
  • 2 tsp cinnamon
  • 1 tsp ginger (ground or fresh)(optional)
  • 1 tbsp chia seeds
  • Handful of walnuts
  • 1 date (finely chopped)
  • 1 tbsp vanilla extract
  • 1–2 tbsp water

Method

  1. Mix all ingredients in a bowl until it comes together. If too dry, add a splash of water.
  2. Roll into small balls using your hands.
  3. Chill in the fridge for 20–30 minutes to firm up.
