Ingredients (makes 9-10 balls)
- 1 carrot, grated
- 80g rolled oats
- 1 tbsp peanut butter or almond butter
- 2 tsp cinnamon
- 1 tsp ginger (ground or fresh)(optional)
- 1 tbsp chia seeds
- Handful of walnuts
- 1 date (finely chopped)
- 1 tbsp vanilla extract
- 1–2 tbsp water
Method
- Mix all ingredients in a bowl until it comes together. If too dry, add a splash of water.
- Roll into small balls using your hands.
- Chill in the fridge for 20–30 minutes to firm up.
