Ingredients:
- 65 g self-raising flour
- 55 g oats
- 1 small carrot, finely grated (approx. 50 g)
- 1 small or ½ large banana, mashed (approx. 60 g)
- 10 g walnuts, chopped
- 10 g flaked almonds (for topping)
- ½ tsp cinnamon
- 1 large egg
- 60 ml milk (dairy or plant-based)
- ½ tsp vanilla extract (optional)
- Small pinch of salt
Instructions:
- Heat the oven to 180°C (350°F). Lightly grease a 6-inch round cake tin
- Into the cake tin, whisk together the mashed banana, egg, milk, and vanilla (if using) until smooth.
- Add the grated carrot, oats, self-raising flour, cinnamon, and salt. Mix just until combined and no dry flour remains.
- Fold in the chopped walnuts.
- level the surface of the mixture and sprinkle the flaked almonds evenly over the top.
- Bake for 20–25 minutes, until golden on top and a skewer inserted in the centre comes out clean.
- Cool in the tin for 5–10 minutes, then lift out, slice, and serve warm or cold. Great with a spoon of Greek yoghurt.
