Apple and Chia Seed Pudding

Ingredients

  • 5 tbsp chia seeds
  • 125g greek yoghurt
  • 1 apple (chopped into large chunks)
  • 1 tbsp honey (optional)
  • raisins (optional)

Method

  1. In a glass jar or airtight container, mix the chia seeds with Greek yogurt.
  2. Add 80ml of water and stir well until you get a thick liquid.
  3. Cover and refrigerate overnight to allow the mixture to thicken into a pudding.
  4. In a saucepan, add the apple chunks and 100ml of water.
  5. Bring to a boil, then reduce the heat and simmer until the apples soften and the water reduces.
  6. Stir in honey and a handful of raisins if using, then let the apple sauce cool.
  7. Store in the fridge until ready to use.
  8. The next day, pour the apple sauce over your chia pudding and enjoy warm or cold.
