Ingredients
- 5 tbsp chia seeds
- 125g greek yoghurt
- 1 apple (chopped into large chunks)
- 1 tbsp honey (optional)
- raisins (optional)
Method
- In a glass jar or airtight container, mix the chia seeds with Greek yogurt.
- Add 80ml of water and stir well until you get a thick liquid.
- Cover and refrigerate overnight to allow the mixture to thicken into a pudding.
- In a saucepan, add the apple chunks and 100ml of water.
- Bring to a boil, then reduce the heat and simmer until the apples soften and the water reduces.
- Stir in honey and a handful of raisins if using, then let the apple sauce cool.
- Store in the fridge until ready to use.
- The next day, pour the apple sauce over your chia pudding and enjoy warm or cold.
