Ingredients
- 1 large banana
- 1 egg
- 120ml milk
- 120g self-raising flour
- 3 tbsp oats
- cinnamon – optional
Method
- Peel and mash the banana into a thick paste using a fork.
- In a large bowl, crack in an egg and add the mashed banana.
- Pour in the self-raising flour and milk, then whisk everything together until smooth.
- Stir in 3 tablespoons of oats and sprinkle in cinnamon to taste.
- Heat a frying pan over medium heat and melt a small amount of butter.
- Spoon in the pancake batter, cooking each side for 2 minutes or until golden brown.
- Serve warm with maple syrup or Greek yogurt.
