Ingredients

  • 1 large banana
  • 1 egg
  • 120ml milk
  • 120g self-raising flour
  • 3 tbsp oats
  • cinnamon – optional

Method

  1. Peel and mash the banana into a thick paste using a fork.
  2. In a large bowl, crack in an egg and add the mashed banana.
  3. Pour in the self-raising flour and milk, then whisk everything together until smooth.
  4. Stir in 3 tablespoons of oats and sprinkle in cinnamon to taste.
  5. Heat a frying pan over medium heat and melt a small amount of butter.
  6. Spoon in the pancake batter, cooking each side for 2 minutes or until golden brown.
  7. Serve warm with maple syrup or Greek yogurt.
