Ingredients
Porridge
- 60g porridge oats
- 100ml milk
- 150ml water
- 1 banana
- 1 tsp cocoa powder
Blueberry compote
- 100g blueberries
- 50ml water
To serve
- greek yoghurt
Method
- In a saucepan, add the blueberries and 50ml of water. Heat on high, stirring occasionally, until the blueberries reduce into a thick sauce—this will take about 5 minutes. Be sure to stir to prevent burning. Once ready, pour the compote into a Tupperware container and set aside.
- In the same saucepan, add 60g of porridge oats, 100ml of milk, and 100ml of water. Sprinkle in 1 tsp of cocoa powder.
- Peel and mash the banana with a fork, then add it to the saucepan with the oats and cocoa mixture.
- Heat the pan on medium and simmer for about 4 minutes, stirring occasionally to prevent sticking.
- To serve, pour the porridge into a bowl, spoon in some Greek yogurt and swirl in the blueberry compote.
