Cocoa & Banana Oats with a Blueberry Twist

Ingredients

Porridge

  • 60g porridge oats
  • 100ml milk
  • 150ml water
  • 1 banana
  • 1 tsp cocoa powder

Blueberry compote

  • 100g blueberries
  • 50ml water

To serve

  • greek yoghurt

Method

  1. In a saucepan, add the blueberries and 50ml of water. Heat on high, stirring occasionally, until the blueberries reduce into a thick sauce—this will take about 5 minutes. Be sure to stir to prevent burning. Once ready, pour the compote into a Tupperware container and set aside.
  2. In the same saucepan, add 60g of porridge oats, 100ml of milk, and 100ml of water. Sprinkle in 1 tsp of cocoa powder.
  3. Peel and mash the banana with a fork, then add it to the saucepan with the oats and cocoa mixture.
  4. Heat the pan on medium and simmer for about 4 minutes, stirring occasionally to prevent sticking.
  5. To serve, pour the porridge into a bowl, spoon in some Greek yogurt and swirl in the blueberry compote.
