Ingredients
- 8 sausages
- 1 red onion, diced
- 1 red pepper, sliced
- 250g pasta (your choice of shape)
- 400g passata
- 3 cloves of garlic, chopped into small pieces or grated
- 80g cream cheese
- 100g grated cheese (cheddar or mozzarella)
Method
- Bring a large pot of water to a boil. Add a pinch of salt, then add the pasta. Cook for about 10-12 minutes. Once done, drain the pasta, saving a little bit of the water to use later if needed.
- While the pasta is cooking, heat a large pan on medium heat. Cut the sausages into large chuncks and then add the meat into the pan. Stir occasionally, breaking the sausage up into small pieces, until it’s browned and cooked through (about 7-10 minutes).
- In the same pan, add the diced red onion and sliced red pepper. Cook them for about 5 minutes, stirring occasionally, until they soften.
- Add the passata (tomato puree) to the pan with the vegetables and stir. Let it simmer for about 2-3 minutes. Then, add the cream cheese and stir until it melts and creates a smooth, creamy sauce.
- Add the garlic and cook for another minute.
- Add the cooked pasta into the pan with the sausage sauce. Stir everything together to make sure the pasta is well coated with the creamy sauce. If the sauce is too thick, add a little bit of the pasta water you saved earlier to loosen it up.
- Sprinkle the grated cheese over the pasta and stir it in until it’s melted and the sauce is extra creamy.
- Your creamy sausage pasta is ready to serve! Dish it up and enjoy.
