Ingredients

  • 2 eggs
  • 150ml milk
  • 2 tbsp sugar
  • 1 tbsp vanilla
  • 1 tsp cinnamon or nutmeg
  • Thick white bread or sliced brioche

For the pan

  • 1 tbsp butter
  • 1 tbsp vegetable oil

Method

  1. In a bowl, crack in the 2 eggs, add the milk, sugar, vanilla, and cinnamon, and whisk well.
  2. Get your pan on the stove and melt your butter and oil. A mixture of butter and oil helps achieve the perfect browning of the French Toast and prevents it from burning.
  3. Turn on your oven to low heat to keep your French Toast warm as you fry it.
  4. Get two slices of bread and leave it to soak up in the bowl for a few seconds. Layer the bread on top of each other to get one thick slice of bread. Watch my video below to see how it’s done.
  5. Fry on each side, on medium-high heat for a few minutes. Cooking over medium to medium-low heat will ensure that the toast is cooked through without burning the outside. As a tip, let the toast cook undisturbed for a couple of minutes before flipping to allow a crust to form so it doesn’t fall apart when flipping.
  6. Decorate with blueberries and greek yoghurt and douse in maple syrup.
