Healthy Carrot Cake Baked Oats

Ingredients:

  • 65 g self-raising flour
  • 55 g oats
  • 1 small carrot, finely grated (approx. 50 g)
  • 1 small or ½ large banana, mashed (approx. 60 g)
  • 10 g walnuts, chopped
  • 10 g flaked almonds (for topping)
  • ½ tsp cinnamon
  • 1 large egg
  • 60 ml milk (dairy or plant-based)
  • ½ tsp vanilla extract (optional)
  • Small pinch of salt

Instructions:

  1. Heat the oven to 180°C (350°F). Lightly grease a 6-inch round cake tin
  2. Into the cake tin, whisk together the mashed banana, egg, milk, and vanilla (if using) until smooth.
  3. Add the grated carrot, oats, self-raising flour, cinnamon, and salt. Mix just until combined and no dry flour remains.
  4. Fold in the chopped walnuts.
  5. level the surface of the mixture and sprinkle the flaked almonds evenly over the top.
  6. Bake for 20–25 minutes, until golden on top and a skewer inserted in the centre comes out clean.
  7. Cool in the tin for 5–10 minutes, then lift out, slice, and serve warm or cold. Great with a spoon of Greek yoghurt.
