How to cook the perfect cheese omelette

Ingredients

  • 4 eggs
  • a knob of butter
  • cheese
  • To serve – rocket and corriander

Method

  1. Crack 4 eggs into a bowl and whisk with a fork
  2. Use a whisk or fork to beat the eggs until the yolks and whites are fully combined, and you see some bubbles. This ensures an even texture.
  3. Place your frying pan on medium-low heat. Add 1 tablespoon of butter or oil and let it melt, spreading it around to coat the pan evenly.
  4. Once the butter is melted and slightly foamy, pour the whisked eggs into the pan. Tilt the pan to make sure the eggs spread out evenly.
  5. Allow the eggs to cook undisturbed for 30 seconds, and then quickly use a spatula or wooden spoon to draw the sides of the eggs toward the centre, gently incorporating the butter. Use your spatula to gently lift the edges and let the uncooked egg flow to the sides.
  6. Once the eggs are mostly set but still soft on top, sprinkle your cheese evenly over one side of the omelette. You can add other fillings like diced veggies, ham, or herbs if you want.
  7. Use your spatula to carefully fold the omelette in half, covering the cheese-filled side.Press down gently to help the cheese melt.
  8. Let the omelette cook for another 30 seconds to 1 minute until the cheese is fully melted and the eggs are cooked through but still soft.
  9. Slide the omelette onto a plate and garnish with extra cheese or fresh herbs. I like to use coriander or parsley.
