If you’re looking for a winter warmer, this cobbler is easy to make and tastes gorgeous!
Ingredients
For the fruit
- 100g margarine / butter
- 50g sugar
- 400g plums
- 3 large apples
- juice of half a lemon
For the cobbler dough
- 1 egg
- 120ml milk / or a dairy free milk alternative (e.g soy or oat milk)
- 150g cold margarine / butter (cubed)
- 270g self-raising flour
- 100g sugar
- 1 tsp cinnamon
Method
- Peel, core and chop up your apples into large chunks and add into a large pan
- Chop up your plums, remove the stones and add into the pan.
- Get the pan on the stove and pour in the sugar. Switch on the stove to medium high heat
- Add in the butter/margarine and stir the mixture until the fruit has reduced down.
- Pour the fruit into a large baking dish and set aside
- Preheat the oven to 190C / 170C fan / gas 6.
- In a large bowl, add the flour and cold butter/margarine. Rub the butter into the flour until it looks like large breadcrumbs. Pour in your sugar and combine using a spoon.
- In the bowl, crack in an egg, pour in the milk, and mix the cobbler dough until it comes together to form a thick dough.
- Dot the dough all over your fruit but leave gaps to allow the fruit to poke through.
- Bake in the oven for 40 mins or until the topping is golden brown. The fruit should be bubbling underneath.
- Serve with dairy free double cream.
