If you’re looking for a winter warmer, this cobbler is easy to make and tastes gorgeous!

Ingredients

For the fruit

  • 100g margarine / butter
  • 50g sugar
  • 400g plums
  • 3 large apples
  • juice of half a lemon

For the cobbler dough

  • 1 egg
  • 120ml milk / or a dairy free milk alternative (e.g soy or oat milk)
  • 150g cold margarine / butter (cubed)
  • 270g self-raising flour
  • 100g sugar
  • 1 tsp cinnamon

Method

  1. Peel, core and chop up your apples into large chunks and add into a large pan
  2. Chop up your plums, remove the stones and add into the pan.
  3. Get the pan on the stove and pour in the sugar. Switch on the stove to medium high heat
  4. Add in the butter/margarine and stir the mixture until the fruit has reduced down.
  5. Pour the fruit into a large baking dish and set aside
  6. Preheat the oven to 190C / 170C fan / gas 6.
  7. In a large bowl, add the flour and cold butter/margarine. Rub the butter into the flour until it looks like large breadcrumbs. Pour in your sugar and combine using a spoon.
  8. In the bowl, crack in an egg, pour in the milk, and mix the cobbler dough until it comes together to form a thick dough.
  9. Dot the dough all over your fruit but leave gaps to allow the fruit to poke through.
  10. Bake in the oven for 40 mins or until the topping is golden brown. The fruit should be bubbling underneath.
  11. Serve with dairy free double cream.
